CULA 2510 - Elements of Table Service

Learners will demonstrate foundational principles of table service in an advanced lab setting. Fine dining service styles such as tableside preparations, French and Russian service techniques, and brigade systems will be employed. Students will experience directing service in the dining room from a management perspective via an open-to-the-public restaurant lab environment. 1C/0/1/0
